Congregation B’nai Harim “Children of the Mountains” is a Reform Jewish congregation, which is affiliated with the Union of Reform Judaism, the Jewish Federation of Northeast Pennsylvania and the Interfaith Council.

Located as we are at the top of Mt. Pocono, we think of ourselves as representing the Height of Reform Judaism. Our intimate setting is perfect for our small congregation. Here you'll find Jewish singles and Jewish and interfaith families, students, young adults and seniors worshiping, celebrating and working together at our twice-monthly, year 'round services. In addition to religious services, B'nai Harim offers an array of cultural, social, adult and family events including regularly scheduled educational talks on relevant topics, Hebrew lessons and ongoing book discussions. For Hours: see our webpage calendar.

Mission: Offering warmth, friendship and sense of family to all those wishing to reaffirm their Jewish identity and enrich their Jewish lives.

Tips for Making Latkes:

Yukon Gold potatoes do not oxidize/change color
If you bake the potatoes first, they will not oxidize either
Grate the potatoes with the onion – the onion juice stops potatoes from oxidizing as quickly!
Instead of draining with dish towel, spin dry in a salad spinner!
Or don’t drain at all – the starch in the potatoes will help bind the latkes
Use an immersion blender to create a combo of more mashed texture and the shredded potato texture
Don’t crowd the pan
Oil – Any oil works, just don’t use olive oil because it will smoke and get bitter
Don't flip more than once or they will get greasy
Take any stray shreds of potato out of the skillet out between batches, or they will burn and become part of new latke. Paper Towel works fine for this.
Transfer the latkes to a rack over a paper towel-lined plate to drain – won’t get soggy
Sprinkle with salt or everything bagel seasoning while still warm.

Baking:
Add two TBS of canola oil to the potatoes. Bake on a cookie sheet sprayed with canola oil at 425 degrees for 15 minutes on side 1 and 10 minutes on side 2.
Brush each side with oil, flatten and bake in a 425 oven until crisp on both sides. You *must use a NONSTICK baking pan* and best to preheat oil on pan in oven 10 minutes, then put batter on and flatten. Latkes stick to foil lined pan and cannot be flipped.
Cooled latkes can be covered loosely with plastic wrap, held at room temperature for 4 hours, transferred to a heated cookie sheet and baked in a 375-degree oven, until crisp and hot, about 5 minutes per side. Or, they can be frozen on cookie sheet, transferred to zipper-lock freezer bag, frozen, and reheated in a 375-degree oven until crisp and hot, about 8 minutes per side)

Toppings:
Apple sauce
Sour cream
Caviar
Smoked Salmon

B'nai Harim Challah Bake Zoom Video

B'nai Harim Challah Bake Zoom Video.

Thanks to Liz Shaid for the zoom challah making class yesterday many of us had home made Challahs tonight.

[06/25/20]   Challah recipe with prayer. Towards the bottom I. The recipe for making 2 challahs.

 Recipe yields 6 challahs
5lb bag flour plus 3 Tbsp1 ½ c canola oil + 1 Tbsp
2 c sugar + 2 Tbsp5 eggs + 1 egg
6 packets Rapid Rise Yeast4 c lukewarm water
1 ½ Tbsp kosher salt

Combine yeast with 2 Tbsp sugar and 4 c lukewarm water. Place bowl in warm place to proof.

In large bowl, combine 5lb bag flour, 2 c sugar and 1 ½ Tbsp salt. Mix thoroughly and make a well in the center. Add 5 eggs, 1 ½ c canola oil and proofed yeast and water mixture. Knead dough until mixed well and not sticky- about 10 minutes. Dab 1 Tbsp canola oil on top of dough and cover with plastic wrap and a towel. Let rise in a warm place for about 2 hours (or more).

Uncover dough. Separate a piece of dough the size of a golf-ball and recite the blessing below for the challah. Place the golf-ball sized dough in a piece of foil and put in the oven and burn it until it is considered not edible. When burned, wrap in another piece of foil and discard. (This is symbolic of the Temple when a portion of challah was donated to the priests.)

Braid the dough into 3, 4 or six strand challah. Brush with egg and let rise again at least one hour. Bake 350 for 25-35 minutes until golden brown.

Blessing for Separating Challah
