Well, it’s time to head home after an enriching time with colleagues at the North American Academy of Liturgy. One more train ride south across the boarder at Seattle, though this one required arriving at the train station at 5am!
With Ruth Duck, FHS, who received the 2018 Berakah Award from the North American Academy of Liturgy in recognition of distinguished contribution to the professional work of liturgy. Congratulations, Ruth! An honor well deserved. For more than a generation not only have your hymns shaped the church in its mission, but you have shaped a generation of its leaders.
On my way to North American Academy of Liturgy meeting in Vancouver, BC, via Amtrak Cascades (because it turns out it’s cheaper to fly domestic and take the train than fly direct; and, besides, the train seems much more liturgical...).

Coconut milk (per directions)*
*You can also substitute coconut cream for oil (1/3 c.) and milk per the instructions.
Use a HEAVY DUTY STAND MIXER with whisk attachment. Do not use bread hooks. In a 2 cup liquid measuring cup, measure 1/3 cup oil, 1 egg, 3 egg whites, then fill with warm coconut milk up to 2 cups liquid, plus 2 TBSP additional coconut milk. Add to dry mix and yeast and beat for 3 minutes on med/high. Pour into 9” pie pan, lightly sprayed with not-stick spray/oil, and let dough rest for 60 to 90 minutes. Dough should rise but if not, will rise when baking. Place a damp cloth or tea towel over the bread in order to keep the top from drying out.
If you want to “stamp” a design on the top, it is best to use the edge of a hard plastic scraper or the like (a knife will often cut too deep) at the end of the rising time.
Preheat oven to 350°. Bake for 45-50 minutes. Let sit for 10 minutes then carefully remove from pan and cool on a rack.
