Part of an old custom to start this important period in Orthodox culture - the seven week, (forty days) period of fasting before Easter, which, in Greek is called Sarakosti. This is a whimsical calendar that counted the weeks of fasting (Lent). It’s not used much in modern times but an interesting honored tradition.

Kyra Sarakosti can be made from various things, paper, clay, fabric or, the most commonly seen, baked from bread or cookie dough.

Kyra Sarakosti, a pious lady, has no mouth, which makes idle talk or gossip practically an impossibility. Her arms are permanently folded in prayer, and the cross on her forehead is a constant reminder of her faith. Lastly, Kyra Sarakosti, is missing her ears, or, if she is lucky enough to still be in possession of them, they are covered by a headscarf, all the better to block out evil, unkind and nasty talk.

She is also seven-legged, representing the seven weeks of the Great Lent. Every Saturday a leg is cut off to know how many weeks of fasting are left until Easter.

In some regions of Greece, the tradition is to hide the seventh leg, the last, inside the Easter bread, the lucky one who finds this last leg belonging to Kyra Sarakosti, is considered blessed. In other regions of Greece, the seventh leg may be hidden inside dried fruit, such as figs, or hidden in fruit trees, or fruit bowls.

Sarakosti will officially kick off tomorrow on Καθαρά Δευτέρα “Clean Monday”.

Ένα απο τα καλύτερα Χριστουγεννιάτικα γλυκά είναι οι Κουραμπιέδες
Κάντε βήμα βήμα την συνταγή και θα κάνετε φανταστικούς κουραμπιέδες
Υλικά
950 γρ αλεύρι μαλακό
250 γρ βούτυρο αγελαδινό
250 γρ πρόβειο βούτυρο
250 γρ ζάχαρη άχνη
3 βανιλίνες
1κτσ μπέικεν πάουντερ
1 κτσ ροδόνερο
180 γρ αμύγδαλο άψητο

Ingredients
950 grams of soft flour
250 g of cow butter
250 g of sheep butter
250 g of powdered sugar
3 vanillins
1tbsp baking powder
1 tbsp rose water
180 g of almond uncooked
Για την Εκτέλεση
Το πρώτο που κάνουμε είναι να ψήσουμε τα αμύγδαλα για να κρυώσουν.στους 170 c για 10 λεπτά
Στον αναδευτήρα θα ρίξουμε τα βούτυρα και θα τα χτυπήσουμε με το φτερό για λίγο. Μετά θα βάλουμε το σύρμα και θα το χτυπήσουμε για άλλα 10 λεπτά. Έπειτα θα προσθέσουμε την ζάχαρη άχνη τις βανιλίνες και 1 κτσ ροδόνερο και συνεχίζουμε για αλλα 10 λεπτά να αφρατέψει καλά. Στην συνέχεια θα βγάλουμε το σύρμα και θα ξαναβάλουμε το φτερό και θα ρίξουμε το μισό αλεύρι απο 950 γρ βαζουμε και το μπέικεν και χτυπάμε πολύ πολύ σιγά. Μόλις το πάρει το αλεύρι θα ρίξουμε και το υπόλοιπο αλεύρι .Τότε θα δούμε την ζύμη να σκληραίνει αλλά έτσι πρέπει να είναι για μια επιτυχημένη ζύμη!!Πλάθουμε με 30 γρ ζύμη και ψήνουμε σε προθερμασμένο φούρνο στους 170c για 25 λεπτά !Μόλις ξεφουρνίσουμε τα αφήνουμε να κρυώσουν και ψεκάζουμε με ροδόνερο και ζάχαρη άχνη και είναι έτοιμα να τα απολαύσουμε Καλή σας επιτυχία!!

One of the most visited sites on Aegina is the church of Agios Nectarios (Saint Nectarios) with next to it the monastery of Agia Triada (The Holy Trinity). Agios Nectarios of Aegina (1846-1920), is one of the most widely known Greek Orthodox Saints. He was officially recognized as a saint by the Ecumenical Patriarchate of Constantinople in 1961. Yearly, thousands of people visit the tomb of Agios Nectarios, to pray to him, or ask for his blessings, which always seem to be answered. His memory is celebrated by the Church on 9th November, name’s day of Nectarios.
